Antojitos or “little cravings” are what Mexican street food is all about. Antojitos are the center of what represents Mexican cooking. If the tantalizing aroma of sizzling carne asada tacos, freshly made masa or warm cinnamon sugar churros don’t reach  your nose fast enough, the sound of people and their distinctive calls will catch your attention quickly and effectively.

Growing up in a Mexican household,  I ate my fair share of traditional Mexican and Tex- Mex dishes like Pork Carnitas. You can have an entire meal of antojitos, or a couple of appetizers before getting the family party started. My ultimate favorite is always Pork Carnitas simply because it is so versatile. It doesn’t matter if it is in a torta, a tortilla, a tostada, or on delicious RITZ Crackers. The tender juicy pork and crispy taste can go with anything and are easy to devour at home.

Pork Carnitas (Mexican slow cooked pulled pork) is always our go to choice when doing family events or small gatherings with friends. It is a winner with our kids too, who can be picky eaters at times. The meat is so tender and juicy on the inside, while also crisp and golden on the outside. Instantly makes my mouth water when I’m preparing it.

How to Make It

If you like having finger food options at parties and no mess for kids to take and go- this recipe is just for you! This recipe is easy to follow and a WINNER for us every time. An easy way to serve them that takes about 15- 20 min (depending on your serving size) is using NABISCO RITZ Crackers. Serve it with avocado, cilantro, jalapenos and cheese slices.

Pork Carnitas RITZ Topper

Ingredients

  • 1/2 cup fully cooked pulled pork
  • 1/2 tsp ground annatto
  • 1/2 tsp orange zest
  • 1/2 avocado, cut in 24 slices
  • 24 pickled jalapeno slices
  • 24 fresh cilantro leaves
  • 2 oz cotija cheese, thinly shaved into 24 pieces
  • 24 RITZ Crackers

Instructions

Make It

  1. Microwave meat, annatto and orange zest in microwaveable bowl on HIGH 30 to 40 sec. or until heated through; stir. 


  2. Top crackers with cheese, seasoned meat, and remaining ingredients.

Tips

  1. Shortcut 

    Substitute store- bought packaged seasoned pork carnitas (Mexican slow- cooked pulled pork) for the pulled pork, annatto and orange zest. 

Special Extras

  1. Top with pickled red onions in addition to pickled jalapenos slices. Granish with cilantro leaves.
